Stocking up

I've been cooking and freezing meals for when the baby comes this past week. So far I have fifteen pounds of hamburger fried and bagged in 1/2 cup portions, two pounds of meatballs, twenty five bean burritos, ten cheese enchiladas, ten BBQ cups, twenty taco cups, a chicken pot pie, and six pork roasts. I need to get some more chicken so I can make some things up with it. We stocked up on things like bread, beans, tortillas, veggies, spaghetti, sauces, rice, and spices. I plan on using the hamburger for tacos, soup, chili, goulash, and hamburger helper. Any suggestions on things I might have missed are welcome. I'd really like to be able to just stay at home with Abraham for his first couple of weeks.

Sounds like a great plan to me. The only other I might do is make up a few meat loafs and freeze them if you like meat loafs.

BBQ cups

10 biscuits (you can use homemade or canned)
1 lb. ground beef - cooked, drained and crumbled
1 c. barbecue sauce (use your favorite)
1 c. cheddar cheese, shredded

Directions:
Preheat oven 375 degrees. In a large saucepan mix cooked ground beef and barbecue sauce and simmer to a boil. Place biscuits in a muffin tin and push up the sides, making a cup. Spoon beef mixture into uncooked biscuit cups and bake until biscuits are done, approximately 10 minutes. The last 3 minutes sprinkle with cheddar cheese and bake until cheese is melted.

For taco cups just substitute taco seasoning and water for the barbecue sauce. My favorite taco seasoning mix recipe is:
to 1 lb. beef
1 teaspoon salt
1 teaspoon onion powder
2 teaspoons EACH chili powder & cornstarch
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/2 cup tap water

Ginger, any suggestions for desserts that freeze well?

Brittany, meatloaf is one of my favorites! Unfortunately Chris won't eat it. I think I will make one up for while my parents are in town though. =)
